Curried Lentil Soup
Curried Lentil Soup is a good option for a vegetarian dinner or even lunch. It can be served with bread or pita.
  • 3 tbsp olive oil
  • 1 medium onion
  • 1 medium carrot
  • 2 large garlic cloves
  • 1 cup French green lentils
  • 4 ¼ cups water
  • 1 can chickpeas
  • 1 tbsp fresh lemon juice
  • 2 tbsp butter
  • 2 green onions, thinly sliced
  • 1 lemon
  • 2 tbsp curry powder


  1. Put 1 tbsp of olive oil in a pot over medium heat. Next put in carrot and onion, add a dash of salt and pepper. Saute until onion is cooked, stir once in a while, for roughly 4 minutes. Include half of a chopped garlic, mix until vegetables are cooked.
  2. Include 2 tbsp curry powder and mix for about a minute. Include lentils and 4 cups of water. Add salt and pepper to taste. Raise the heat and bring to boil. Lower the heat, allow to cook until lentils are soft or for about 30 minutes.
  3. As these ingredients cook blend chickpeas,water,lemon juice, olive oil and any garlic left back. Mix the chickpea puree along with butter to lentil soup. Serve soup warm. It can also be prepared before hand and reheated if necessary.
