Breadfruit Casserole
This breadfruit casserole usually made as a side dish and can serve up to 5 people.  This is guaranteed to be a favourite with your family.
INGREDIENTS
  • 1 large breadfruit
  • ½ cup onion
  • 1 stick celery
  • ½ cup sweet pepper
  • 2 eggs
  • 1 tsp baking powder
  • ¼ cup margarine
  • 3 sprigs scallion, fresh
  • 1 tsp black pepper
  • 1 tsp all purpose seasoning

 

 

 

 

PREPARATION:

Peel the breadfruit, dice and boil. Remove from heat and drain. Saute onion, celery and sweet pepper in margarine. Add to boiled breadfruit. Add eggs, baking powder, scallions, black pepper and seasoning.

Pour into a greased baking dish and bake at 350°F until lightly brown. Garnish with scallions and sweet pepper.
