This is a great soup recipe that can be served hot or cold. Serve this as an appetizer when you are entertaining guests.
- 1 oz margarine
- 2 avocados
- 3 cups of chicken stock
- Evaporated milk
- Take off the skin and core from the avocados and cut up. Puree in an electric blender with the chicken stock. Place in a pan and allow to simmer for a few minutes.
- Add salt and pepper to taste, next add nutmeg and blend well. Take from heat and stir in the milk. Sprinkle diced chive on the soup.
- Allow to cool and serve. You can prepare this soup up to 1 day ahead.
