Avocado Soup
This is a great soup recipe that can be served hot or cold. Serve this as an appetizer when you are entertaining guests.
INGREDIENTS
  • 1 oz margarine
  • 2 avocados
  • 3 cups of chicken stock
  • Salt
  • Pepper
  • Nutmeg
  • Evaporated milk
  • Chives

 

  1. Take off the skin and core from the avocados and cut up. Puree in an electric blender with the chicken stock. Place in a pan and allow to simmer for a few minutes.
  2. Add salt and pepper to taste, next add nutmeg and blend well. Take from heat and stir in the milk. Sprinkle diced chive on the soup.
  3. Allow to cool and serve. You can prepare this soup up to 1 day ahead.
