Loaded Baked Potatoes

Potatoes are one of the great comfort foods, especially when stuffed with a satisfying mixture of lean ground beef and broccoli florets.


  • 1 baking potato
  • whatever filling you fancy


  • Preheat oven to 200’C/Gas mark 6
  • Wash and dry the potato, prick with a fork, put in the top of the oven for 1-2 hours (depending on the size of the spuds) – until the potatoes are cooked through and crispy on the outside
  • To cook on a barbecue or bonfire: wrap the washed and pricked potatoes individually in foil and cook in the embers of the barbecue or bonfire for 1-2 hours
  • Alternatively, bake the potatoes in the oven or microwave until almost cooked, then finish them off on the barbecue grill to crisp them up

And choose your favourite fillings:

  1. Chilli/veggie chilli
  2. Baked beans and grated cheese
  3. Tuna and sweetcorn (with mayo)
  4. Scrambled egg
  5. Cheese and bacon
  6. Cottage cheese
  7. Prawns in Marie Rose sauce
  8. Sautéed garlic mushrooms
