Baked Cod with Cracker Topping

For this recipe the cod is coated with cracker crumbs, lemon and parsley and baked for a quick and cheap weekday dinner. 


  • 2 pounds skinless cod fillets
  • Salt
  • 1 sleeve of Ritz crackers (about 34 crackers)
  • 5 Tbsp unsalted butter
  • Lemon and parsley for garnish


1 Preheat the stove to 350°F. Oil a small baking pan or casserole pan with margarine or a little oil. Wash off the fish filets with cold water, pat dry. Utilize long nose pliers to take out any pin bones from the filets. If you want, cut the filets into big serving pieces. Place the filets at the base of the pan, sprinkle with salt.

2 Melt the butter. Crush the crackers over a dish; they ought to look like coarse breadcrumbs. Blend the melted butter with the breadcrumbs. Pack the crumb blend over the top and sides of the fish filets.

3 Place fish in the oven and bake for 20 minutes, or until the fish flakes off easily.

You can serve the fish with lemon and parsley.
